SUMMO is a boutique Wagyu brand created by Humans of Wagyu. The name comes from the Latin word summo — meaning to the highest degree. It is not a claim. It is a standard we hold ourselves to with every selection we make.

Our Practice

We curate Wagyu.

Not everything available. Not the largest catalogue. A carefully considered collection of animals that stood out during selection for their character, balance, and origin. Every Wagyu in our collection is chosen individually. We look at the farmer, the region, the feeding program, the carcass quality, and the story behind the animal. If it does not meet our standard, it does not carry the SUMMO name.

Why it matters.

Wagyu has become a broad term. It covers a wide range of quality, origin, and intention — and it is not always easy to know what you are buying. We started SUMMO because we believed there was a better way to present Wagyu to the people who genuinely care about it. Not with exaggeration. Not with noise. But with clarity, traceability, and respect for the animal and the people who raised it. Every product we offer comes with a story. Where it came from. Who raised it. Why we selected it. That is not marketing — it is how we think Wagyu should be sold.

The Foundation

Selection as Foundation

We assess each animal individually, looking at breed, bloodline, region, farming method, feeding program, and carcass quality. Grade matters, but grade alone is not enough. We are looking for Wagyu that has something worth talking about — a consistency of character that you can taste. Not all Wagyu qualifies for SUMMO. That is the point.

How we work.

We ship fresh across Europe and beyond, three times a week, using temperature-controlled packaging and DHL Express. Every order is vacuum-sealed and packed with care. Traceability documents are available for all carcass-listed products.
